Crispy Chicken Nuggets Recipe – Healthy and Simple

I’ve been making more kid-friendly meals now that Dillon can have finger foods. These easy Crispy Chicken Nuggets have been my go-to recipe, made with simple ingredients like breadcrumbs, egg, and avocado oil. This recipe is very versatile, so you can customize to use whatever breadcrumb and seasoning you like. I used plain breadcrumbs and some sea salt.

To prep, all you need is a large plate, a mixing bowl and a frying pan with frying oil. Although these are “fried”, I don’t use a lot of oil, just a little more than enough to coat the bottom of the pan. Avocado oil is a great high heat oil to use for this recipe and a healthy option. You can bake these if you’d like but I find they are much more tender and crispy when lightly fried.

Crispy Chicken Nuggets Recipe

  • 1 1/2 cups of plain breadcrumbs
  • 1 egg
  • Avocado oil (a little more than enough to coat your pan)
  • 1 pound of boneless skinless chicken breasts
  • Salt and pepper or seasoning of choice

Directions

  1. Using scissors or poultry shears, start by cutting up your chicken into nugget size pieces.
  2. Add the breadcrumbs to a large plate and egg to a medium sized dipping bowl, beating the egg.
  3. Warm a non-stick frying pan with avocado oil on your stove on medium/high heat (enough to cover your pan).
  4. While your oil is heating up, dredge your chicken Nuggets one at a time into the egg first then breadcrumbs, evenly coating each side.
  5. Add chicken to your hot pan and fry on both sides until golden brown and cooked through.
  6. Enjoy with your favorite dipping sauce. I made a honey mustard sauce using equal parts mayonnaise, brown mustard and honey.
