Did you know that zucchini is actually a fruit and not a vegetable?! It’s my favorite in the summer. If you’ve got zucchini for days, here’s a great recipe to use it with that has a healthy twist using greek yogurt and less sugar than traditional breads.
I used regular all-purpose flour for this recipe but I’m sure you could sub with a gluten-free mix like King Arthur’s.
Recipe:
1 1/2 cups grated zucchini (not drained)
3/4 cup granulated sugar
1/4 cup coconut or brown sugar
1/2 cup vanilla geek style yogurt (I used Siggis vanilla )
1/3 cup avocado oil or vegetable oil of choice
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
Directions:
1. Preheat oven to 350 degrees F
2. Grease a 9×5 inch loaf pan
3. In a large bowl, add zucchini, sugar, yogurt, oil, eggs, and vanilla. Whisk until well combined.
4. Add flour, baking powder, baking soda, salt, and cinnamon. Mix and then pour batter into loaf pan.
5. Bake for 50-ish minutes until toothpick comes clear when piercing the center.
