Pumpkin Peanut Butter Cups (Vegan)

First day of fall is right around the corner! I’ve been posting all the pumpkin recipes on my Instagram feed and wanted to share with you my newest and easiest pumpkin recipe–these Pumpkin Peanut Butter Cups.

I’ve been making regular Peanut Butter cups for a while now and figured it was time to change things up.

Made with pumpkin purée (from the can) and pumpkin pie spice, these PB cups are the perfect fall treat that everyone will love. You can make them vegan by choosing to use dark chocolate chips. My favorite are Enjoy Life Chocolate Chunks You’ll want to grab a mold to make, which you can use over and over again! I used this one from amazon Silicon PB Cup Mold

Pumpkin PB Cups Recipe:

-makes 12-

Filling:

  • 1/4 cup of natural peanut butter
  • 3 tablespoons of pumpkin purée
  • 1/2 tsp of pumpkin pie spice
  • 1 tablespoon of maple syrup

Mix all ingredients together until a batter forms. If too sticky, add some almond flour or coconut flour to thicken.

Chocolate:

1. Melt 1/2 a bag of dark chocolate chips (or semi-sweet) in the microwave for about 3 minutes, stirring in between and being careful not to burn.

2. Remove from microwave and add a dab of coconut oil and stir until melted (you may have to add back for 30 secs or so in the microwave to fully melt)

3. Using a spoon, add a layer of chocolate to your molds, fully coating the bottom and sides of the molds, then add a spoonful of PB mixture, finally top with a layer or chocolate. Optional: sprinkle with flaky sea salt.

5. Pop in the fridge for an hour or more and serve
