Usually on Sundays we make pancakes, but Matt recently had the brilliant idea to make French toast with cinnamon raisin bread, so this past weekend we made Cinnamon Raisin Stuffed French Toast—such a game changer! This recipe will be on repeat for sure!
Most of my recipes have a healthy twist to them, but sometimes you just need to indulge and these are totally worth it! I’d say the “healthy” twist(s) to this recipe is that I used almond milk instead of regular milk, and vegan butter instead of regular butter, but no judging using real milk and butter.
For the stuffing, I made a homemade cream cheese frosting using cream cheese, confectioners sugar, vegan butter and vanilla extract–it really makes these stand out from traditional French toast. Go big or go home, right?!
Cinnamon Raisin French Toast Recipe
- 8 slices of cinnamon raisin bread
- 4 eggs
- 1/4 cup of milk (I used homemade almond milk)*
- 1 teaspoon of cinnamon
- 1/4 teaspoon of nutmeg
- 1/2 teaspoon of vanilla extract
- 2 teaspoons of butter for cooking
1. Mix eggs, milk, spices and vanilla together in a dipping bowl and beat together
2. Heat a medium sized non stick pan with 1 tablespoon of butter (add more as needed)
3. Dip each bread slice in egg mixture, coating both sides and cook on the pan until browned on both sides
4. Serve with maple syrup and cream cheese frosting

Cream Cheese Frosting
- 4 oz of cream cheese
- 1/4 cup of butter, softened
- 1 cup of confectioners sugar
- 1 teaspoon of vanilla extract
1. Add cream cheese and butter to a medium sized mixing bowl, beat with a mixer until well blended
2. Add sugar and vanilla and beat until creamy
