It’s been hot here in Boston and all I have been craving lately are smoothies, fruit, and ice cream. To avoid going out for an ice cream every night I decided to finally buy an ice cream bar mold and make my own fudgsicles. They are so easy to make and taste like the real thing. Not sure what took me so long to make my own. I got the mold off of Amazon: BPA-free Ice Cream Bar Mold
This recipe requires only 3 ingredients:
- Canned full fat unsweetened coconut milk
- Raw cacao or cocoa
- Honey
To make, you will need a food processor or high speed blender. I used a small KitchenAid food processor on pulse mode and it worked great.
Recipe:
- 1 cup of canned full fat unsweetened coconut milk, (shake well before opening the can)*
- 1/4 cup raw cacao or cocoa
- 1/4 cup of honey
Directions:
Blend ingredients in a high speed blender or pulse in a food processor and then add to your molds with Popsicle sticks. Pop in the freezer for at least 5 hours or until ready to serve.
*If you want them extra fudgy, I recommend using more of the thick part of the coconut from the can and less liquid
