Apple Crisp Skillet Recipe- Vegan and Gluten Free

My love for Apple Crisp runs deep and being from New England, it’s the perfect fall recipe to make with all the leftover apples from apple picking.

I posted this Apple Crisp recipe on my Instagram feed earlier this week and it was a big hit so I decided to officially post it to the blog so that it can be easily searched here.

I’ve always had trouble getting the perfect crisp when making apple crisp and have read that lots of butter usually helps gives it that extra crisp. If you are fine with dairy, you can always make this with butter instead but you’ll want to keep the butter cold and mix it with the other toppings using a mixer so that it’s crumbly. I think next time I make this, I may try the same method with the coconut oil to see if it’ll crisp up more. Let me know if you having any luck with this or if you have other tips. I’ve also read that to get a really good, fool-proof crisp, you have to add in grape nuts with your topping, but I omitted because of the gluten.

What you’ll need:

7 inch cast iron skillet or non-stick pan

I used honey crisp apples for this recipe but any apple should do

RECIPE:

Apple Filling:

  • 4 medium crisp apples (honeycrisp work great)
  • juice from 1/2 lemon
  • 2 tbsp coconut oil
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg

Crisp Topping:

    1/2 cup coconut oil, melted
    2 tbsp maple syrup
    1 tsp cinnamon
    pinch of sea salt
    1/2 cup gluten-free oat flour
    2/3 cup of old fashioned oats

DIRECTIONS:

  1. Preheat the oven to 350 F
  2. Peel and slice apples thin, toss with lemon juice and set aside
  3. Heat a 8 inch cast iron skillet or nonstick pan on the stove on medium-high heat. Add all filling ingredients except apples to the skillet and cook for 2 minutes until hot then add in apple pieces and stirring continuously to coat them in the sauce and cook until somewhat soft about 5-7 mins
  4. In a bowl, stir together all of the ingredients for the topping. Spoon the mixture evenly over the filling.
  5. Bake in the oven for 18-20 minutes until the topping is golden brown
  6. Serve the crisp topped with vanilla ice cream or coconut whipped cream
