Fall is finally here and the pumpkin recipes are non-stop. Today I’m sharing a simple breakfast that is a must try if you are a pumpkin fan–Pumpkin Spiced Oats. I used to hate the pumpkin hype but ever since I discovered Pumpkin Pie Spice I’ve been obsessed with pumpkin spiced anything. Sometimes I don’t even use actual pumpkin in my recipes, just the spice!
This Pumpkin Spiced Oats recipe uses both the spice and the purée and I definitely recommend adding the spice in case you are wondering if you can omit it. I got mine at Trader Joe’s, but any pumpkin spice will do. You can also just combine cinnamon, ginger, cloves, nutmeg, and cardamom and you have pumpkin spice.

These oats are so easy to make and also nutritious: packed with fiber, complex carbs, and some protein. I used homemade walnut milk for some extra protein and omega 3’s, but you can use water or whatever milk you desire. I prefer to use milk because it makes the recipe more filling and creamy.
- ½ cup of old fashioned rolled oats
- ½ cup of filtered water or milk of choice
- 1 tablespoon of pumpkin
- 1 teaspoon of honey or maple syrup
- ½ teaspoon of pumpkin spice
- a dash of salt
- Add all ingredients to a microwave-safe bowl and mix evenly together with a spoon
- Cook in microwave for 1 minute
- Remove from microwave and stir and serve with pecans or walnuts or bananas (whatever you desire)
