Broccoli Cheddar Puffs

You know those recipes that you never measure, you just eyeball it based on consistency and run with it? Well this Broccoli Cheddar Puffs recipe started off that way and I’m just now finally getting the measurements down so that I can share with you since it is one of my favorite appetizers to make.

These are, in my opinion, way better than any store bought, restaurant style cheese puffs. They require just 4 ingredients and can be subbed for different flours depending on your diet. And the best part, they aren’t deep fried. My husband requests them on a weekly basis.

Here’s what you’ll need:

  1. Broccoli crown
  2. Flour (I used Otto’s Cassava Flour)
  3. Cheddar cheese
  4. Eggs
  5. Frying pan oil (I used avocado oil}

Only 4 ingredients, this gluten free appetizer is a big hit and perfect to add to your meal or for entertaining

Serves: 24
Ingredients
  • 1 broccoli crown
  • 3 eggs
  • ¼ cup of flour
  • 1½ cups of cheddar cheese (loosely packed)
  • Pinch of sea salt and black pepper
  • 2 tablespoons of avocado oil (or another good frying oil)
Instructions
  1. Start by rinsing the broccoli and patting it dry then cut into bite size pieces. Set aside
  2. Heat a pan on medium to high heat with avocado oil
  3. Start making your batter by beating the eggs with a whisk or fork in a medium sized bowl then beat in flour until evenly mixed. Add in cheese, salt and pepper and mix well.
  4. Dip your broccoli pieces one by one, head side down and grab as much batter onto the crown as you can. It's fine if it doesn't perfectly stick. Quickly transfer one by one the battered broccoli to the hot pan to fry and turn to brown evenly on each side. Transfer to a plate with a paper towel to absorb any excess liquid.
  5. Serve with ranch dipping or another creamy sauce
