If you’ve seen my smoothie recipes before, you know that I love adding avocados to them. Avocados are one of my favorite things to eat. Shockingly, I’ve never baked with them…until now.
Okay seriously though, why haven’t I tried them in muffins before? Now that I’ve moved into a new house I feel like I’m starting to experiment with different things. Change is good, it makes us try new things. So let’s change up my usual muffin recipe and add in some avocado!
Avocado is a great replacement for oil in recipes (I just used one) and makes everything come out super soft, like these yummy and healthy muffins.
I like to add in chocolate chips to make these slightly sweet, but since I used dark chocolate, they are still pretty healthy.
You can make your own oat flour by processing old fashioned dried rolled oats in a blender or food processor, but you’ll need about 2 1/4 cup of dried oats to make 2 cups of oat flour. Or you can just buy oat flour. I love this brand by Arrowhead Mills.
- 1 ripe avocado
- 2 medium ripe bananas
- 2 eggs
- 1 teaspoon of pure vanilla extract
- 2 cups oat flour
- 1 teaspoon baking soda
- ¼ cup dark chocolate chips
- ¼ cup of honey
- Pinch of sea salt
- Add the avocado, banana, eggs, honey and vanilla to a food processor or blender.
- Blend until smooth.
- In a large bowl sift the flour and baking soda.
- Add the avocado and banana mix to the dry ingredients including the chocolate chips.
- Mix gently until just combined.
- Spoon batter into a greased or lined 12 hole muffin tin (3/4 full in each hole).
- Bake at 350 degrees F for 20-25 mins.
- Let cool before removing.
