Can’t decide on what to make with your leftover pumpkin purée? I put a poll up on Instagram stories to figure out what I wanted to make with mine. Pumpkin bites won over pumpkin squares, so pumpkin bites it is!
These bites taste like pumpkin cider munchkins. They are the perfect fall treat, and are great for a quick pre-workout snack.
All you need are 6 ingredients:
- Pumpkin pie spice
- Almond Butter
- Oats
- Pumpkin purée
- Coconut oil
- Honey
For the almond Butter, I made my own from this recipe homemade Nut Butter but you can use store bought. Since my almond butter was homemade, it had a thicker consistency then some store bought, drippy ones. So if yours is super drippy, you may need to add more oats.
For the oats, I used old fashioned ones and grounded them up in my food processor to make an oat flour-like consistency. You could also use oat flour if you have it.
I rolled mine in cinnamon sugar (coconut) to make them extra good.
You may want to double up the recipe because they go quick and are so easy to snack on. I do recommend keeping them cold in the fridge as they are pretty soft.
- ⅓ cup of pumpkin purée (not the pie filling)
- 1⅓ cup of ground up oats (or oat flour)
- ½ cup of almond butter
- 1 tablespoon of coconut oil
- 1 tablespoon of honey
- 2 teaspoons of pumpkin pie spice
- Pinch of sea salt
- Sugar and cinnamon for rolling
- Mix all ingredients together in a food processor until a dough like consistency is achieved. If too sticky, add more oats.
- Using a tablespoon or cookie dough scooper, scoop about a tablespoon of the dough and roll into balls and place on parchment paper on a plate.
- Roll balls in a bowl with cinnamon and sugar
- Place plate in the fridge for at least an hour and then store in air tight container in the fridge for up to 1 week.
