Quinoa & Kale Frittata Patties

There’s nothing I love more than starting my day off with a well-balanced breakfast. But finding time to whip up the perfect breakfast can be challenging during a busy work week. That’s why I’ve decided to start prepping my breakfast meals for the week with nutritious and satisfying options such as these Quinoa & Kale Frittata Patties. They are so easy to prep and you can store them in the fridge until you are ready to enjoy them. Warm them up in the microwave or on the stove or even enjoy them cold if you prefer.

I like to top mine off with some Sriracha mayo but that is optional of course.

Here are the ingredients you will need:

  • kale
  • scallions
  • quinoa
  • eggs
  • salt & pepper
  • garlic powder

Quinoa is my favorite grain to cook with. It’s packed with protein and fiber. It is also fries well and adds a nice nutty texture to this recipe. I added in some parmesan cheese, which I didn’t list above, so its completley optional. I do find that the cheese makes these patties extra yummy and more crowd pleasing. My husband loved them with the parmesan cheese, so just saying.

Recipe:

  • 2 chopped up scallions
  • 1 cup of finely chopped up kale, loosely packed
  • 2 eggs, lightly beaten
  • 2 cups of cooked quinoa
  • salt and pepper to taste
  • 1/4 cup of parmesan cheese (optional)
  • 1/2 tsp garlic powder

Instructions:

Add all ingredients together in a medium sized bowl. Using your hands, mix together and form 2-3 inch sized patties. Place the patties on a frying pan with some avocado oil (enough to cover the pan) and fry on each side until browned and cooked.

Note: Be careful when flipping, these may fall apart. To make the batter easier to handle, you can freeze it for 15 or 20 minutes so that it is more firm to handle.

Optional: Top with Sriracha mayo: Mix equal parts mayo + Sriracha sauce.
