Got ripe bananas? Let’s make banana bread!
Banana bread is always a good idea.
I’ve been experimenting with different ingredients to make the perfectly well-balanced banana bread, and this one is my best so far!
This is my first time using ghee when baking, so I was a little nervous about the texture of the banana bread, but it came out great. You can always swap the ghee for butter in this recipe if you’d prefer.
To make this bread super moist, I added in 3 tablespoons of dairy free Cashewgurt. Forager is my favorite dairy free yogurt. You can use any yogurt you’d like for yours.
I only used 1/4 a cup of coconut sugar. You can add in more sugar depending on how sweet you like it but I find that the 3 bananas make it sweet enough for my liking. The low sugar in the recipe and addition of the yogurt, makes this banana bread a great low-glycemic snack that you don’t have to feel guilty about. I typically like to add in walnuts to my banana bread but left them out of this recipe since I didn’t have any.
Recipe:
- 1/4 cup of ghee or butter
- 1/4 cup of coconut sugar (or more if you’d like it sweeter)
- 1 large egg
- 1/2 tsp vanilla extract
- 1/2 cup of gluten free oat flour
- 1/2 cup of coconut flour
- 1/2 tsp baking soda
- 1/4 tsp sea salt
- 3 tablespoons of dairy free yogurt or Greek yogurt
- 3 very ripe bananas
- Dry oats for topping
Instructions:
Preheat Oven to 350 F and grease a 9X5 loaf pan.
Mix the sugar and the ghee together in a medium sized bowl. Then mix in a lightly beated egg and the vanilla. Next mix in flour, baking soda, and salt.
In a separate bowl, mash your bananas with a fork or masher and mix in the yogurt with the mashed banana. Fold the banana/yogurt mixture into the bowl with the rest of the ingredients
Add to greased 9X5 loaf pan. Top with dry oats and sprinkled coconut sugar.
Bake for 35-40 minutes until center is clear when sticking a toothpick in it. Remove from oven and let it cool before serving.
