Does everyone else love RX Bars as much as I do?! They are one of the few bars that I eat as they have minimal and non-processed ingredients.
Ever since I found this egg white powder at Trader Joes, I’ve been wanting to try and make my own.
Whenever I am traveling, I always carry RX bars with me. They are the perfect well balanced bar, with lots of healthy protein from the egg whites, good fats from the cashews and almonds, and great source of fiber and carbs from the dates.
Since I am traveling this week, I decided to finally make my own!
It was pretty easy to whip these up as I had most of the ingredients on hand. I omitted the dates from the recipe to cut down on sugar. I did use some maple syrup for the chocolate flavored ones to tone down the the bitterness from the cacao.
Here are some of the ingredients you will need:
- Nut butter (I made my own homemade mixed nut butter for this recipe with almonds and cashews, you can find the recipe here).

- Almond meal / Coconut flour
- Maple syrup or honey (optional)
Here are the flavorings:
- Cacao Powder
- Coconut Cream (or coconut butter)
- Beet Root Powder
Chocolate Bar Recipe:
1/2 cup of nut butter (I used Almond and Cashew)
1/4 cup of egg white powder
1/4 cup of almond meal (flour)
2 tablespoons of cacao powder
2 teaspoons of maple syrup or honey
1/4 teaspoon of sea salt
Coconut Bar Recipe:
1/2 cup of nut butter
1/4 cup egg white powder
1/4 cup of coconut flour or almond meal
2 tablespoons of coconut cream (or coconut butter)
Beet Bar Recipe:
1/2 cup of nut butter
1/4 cup egg white powder
1/4 cup of almond meal (flour)
2 tablespoons of beet root powder
Instructions:
Blend ingredients together in a food processor until a firm/dough-like consistency is achieved. If consistency is too sticky, add more almond meal or flour. If too dry, add in some maple syrup or water.
Place dough on parchment paper and form into 1 x 2 inch rectangles with your hands. Store in fridge until cooled and ready to eat.
