I love adding granola to smoothie bowls and yogurt. But it’s hard to find a good granola that doesn’t have a ton of sugar. Healthier granola brands tend to be expensive, so I’ve decided to start making my own again.
I’ve had this recipe on hand for a while now. It’s super simple, low in sugar, and you can add or modify ingredients to your liking. I just used raw almonds for an added crunch, but you can add in any nut or dried fruit combo.
This recipe can be easily swapped with different ingredients such as honey for maple syrup, coconut sugar for brown sugar, and coconut oil for whatever oil you fancy.
Recipe:
Yields 4 Cups
4 cups of old fashioned oats
1 tablespoon coconut sugar (or brown sugar)
3 tablespoons of honey
1/4 cup coconut oil
1/2 teaspoon of cinnamon
1/4 teaspoon of sea salt
1/2 cup raw almonds (optional)
Instructions:
Preheat oven to 250 degrees.
Combine sugar, honey and coconut oil in a small saucepan over medium heat.
Cook, stirring often until sugar is dissolved.
Pour sugar mixture over oats and almonds and add cinnamon and salt. Stir until oats are evenly coated.
Spread granola mixture over a cookie sheet (sprayed if non-stick) and press mixture down.
Place in oven and bake for 1 hour, stirring every 15-20 minutes.
Remove from oven and allow to cool completely before breaking apart and into pieces. Be patient as the longer you let it sit the better it’ll form into nice big chunks.
Store in a ziplock bag or other airtight container.
Enjoy as a snack by the handful, on top of yogurt, or with milk!
