Easter weekend is here which means lots of candy and chocolate will be had! I always have a weakness for chocolate and since most Easter chocolate is very sweet, I decided to make my own peanut butter eggs.
These eggs are super simple to make and you only need 4 ingredients. I used Enjoy Life mini chips to make this delicious dessert vegan and I would attest to the fact that these are by far the best peanut butter eggs I’ve had! They were highly adapted by the talented Ambitious Kitchen.
You’ll need to prepare your peanut butter batter about a half hour ahead of time to allow the batter to harden.
Recipe:
1 cup natural peanut butter
1 tablespoon pure maple syrup
2 tablespoons of coconut flour
1/2 package (6 oz) of semi-sweet morsels
Optional: sea salt, for sprinkling on top
Instructions:
Start by mixing the peanut butter with the coconut flour and maple syrup and let it chill for about a half hour in the freezer. You can always omit the maple syrup if you are trying to cut down on sugar.
Once The peanut butter is chilled, remove from the freezer and scoop about a tablespoon size of the batter and form into about 10 oval shaped pieces on parchment paper. You’ll want to place the parchment paper on a plate that you can easier transfer to the freezer.
Once you’ve made all of your eggs (makes about 10) place them in the freezer with the parchment paper and let chill for another half hour.
While you batter is chilling, you can start to heat up your chocolate either on low in the microwave or on the stove. I heated on low for about 4 mins in the microwave. Once melted, take out and stir in about a teaspoon of conconut oil to make the chocolate more runny.
Remove your batter from the freezer and use a fork to pick up each egg and dip them evenly in the chocolate. Shake off excess chocolate and place on parchment and sprinkle with sea salt.
Transfer eggs to the fridge to harden until ready to serve.
