Is it the weekend yet? Thursday’s are always a struggle for me. The weekend is almost here, but not quite! I’m snacking on some of these amazingly healthy Coconut Almond Oatmeal Cookies I made this week before I head to Barre class.
I’ve been nixing the caffeine lately (which for me is usually a matcha or chai tea latte), you can read more about why here: MOVE OVER COFFEE! NON-CAFFEINATED, ADAPTOGEN DRINKS ARE TAKING OVER! And since I need something to help perk me up today, these cookies do just the trick. Not to mention, I have a bit of a sweet tooth, so anything to satisfy those sweet cravings is a win! Yes, even in the mornings I want sweets, and I always want carbs, especially before my workout. Don’t get me wrong, these cookies are not that sweet, I only used a teaspoon of maple syrup in the recipe but they are just enough to satisfy me.
I randomly made up this cookie recipe with what I had in the pantry, so it’s super simple to whip up! If you are not vegan or GF, you can easily sub for some of these but all you need is 6 main ingredients: Old fashioned rolled oats (GF) , almond meal (you can use oat flour or another nut flour as a sub), creamed coconut, melted (coconut butter or nut butters work as well), MCT oil (you can sub with coconut oil), chickpea aquafaba (sub with an egg), and maple syrup (sub with honey). I then added in my favorite fix-ins such as collagen peptides, pink salt (because I love adding salt to all my sweets!), cinnamon, unsweetened coconut shreds, Enjoy Life chocolate chunks, and craisins. Oh…and I snuck in some chia seeds (you would never know)!
Can we talk about aquafaba (literally meaning “bean water” in Latin) for a minute and why I am just using this amazing liquid for the first time ever?!!! First off, I am all about not being wasteful, and aquafaba takes non-wasteful cooking up a notch! Use the beans and the bean water? WIN-WIN! Secondly, it’s an excellent sub for eggs in practically any recipe! Thirdly, IT’S VEGAN! And lastly (but not least), you can eat it right out of a spoon!!!!! Wait…what? What I mean is, this brings cookie dough and brownie batter to a whole new level! Lick the spoon?! Heckkkk-yas! And licked the cookie-dough spoon I did for these bad boyz!
So if you are looking for something to just snack on and not feel guilty about it (cookie dough and all), these are the perfect little treat!
Here is the super simple recipe:
Coconut Almond Oatmeal Cookies
Yields ~10-12 cookies
1 cup of old fashioned rolled oats
1/2 cup of almond meal
3 tablespoons of chickpea aquafaba (sub for 1 egg)
1 tablespoon of creamed coconut (or coconut butter)
1 tablespoon of MCT oil (or melted coconut oil)
1 teaspoon of maple syrup (or honey if not vegan)
1/4 cup of your favorite fix-ins. I used pink salt + cinnamon + unsweetened shredded coconut, Enjoy Life chocolate chunks + craisins. I also added in 1 scoop of collagen peptides.
Preheat oven at 350 F. Mix all ingredients together in a bowl. If batter is too dry, add in more melted coconut oil or coconut butter. Then add about 10-12 tablespoon sized cookies to a greased baking sheet and bake for ~9-10 minutes or until browned at the edges.
