Homemade cashew mylk has become the new staple in my smoothies lately. The creaminess is out of this world. I used it in this yummy and nutritious Cherry Almond Vanilla Smoothie that I’m sharing with you since it is one of my new favorites. It’s so good that it needs it’s own blog post. So here we are!
I love the richness of the cashew mylk combined with the sweetness of the cherry, it makes this smoothie taste like dessert! A healthy dessert, that is.
I chose to use cherries in this smoothie since they have a low glycemic index (and fairly low glycemic load), which means the fructose from them won’t spike your blood sugar levels. I also replaced the usual banana for zucchini in this recipe as it has more potassium than a banana and less sugar. I can’t even tell the zucchini is in this smoothie, given it’s mild taste.
Speaking of mild taste, I’d like to talk about the protein I used in this recipe, collagen peptides. It’s unflavored and easily dissolvable and is also great on my digestive system. Recipe:
- 1 cup of frozen cherries
- 1/2 a zucchini (lightly steamed)
- 1/2 an avocado
- 1 cup of Homemade Cashew Mylk (or unsweetened almond milk)
- 1 tablespoon of almond butter

- 1/2 teaspoon of pure vanilla extract
- 1/2 teaspoon of cinnamon
- 1 tablespoon of ground up flax seeds (optional)
Instructions:
Blend all ingredients together in a high speed blender and enjoy!
