I am obsessed with these peanut butter cups and once you make them, you will be too!
These PB cups are free of dairy and soy thanks to the wonderful Enjoy Life Semi-Sweet Mini Chips chocolate. You can choose to use any of your favorite chocolate chips or chocolate bars for this recipe.
This has easily become my go-to dessert recipe as these PB cups are devoured entirely whenever I make a full batch and bring them to a party.
The best part about these crowd-pleasing peanut butter cups is that they are healthier than Reese’s PB cups and taste MUCH better (in my opinion). Oh, and you must add the sea salt–it really sets them apart.
Serving: About 20 small cups
Needed: mini baking foils/cups or mini peanut butter cup mold
Recipe:
½ cup natural peanut butter (or any other kind of nut butter you like)
¼ cup coconut flour
1 tablespoon of maple syrup (optional)
1¼ cup semi-sweet chocolate chips (I used Enjoy Life Brand which are vegan and soy free)
Flaky sea salt for sprinkling
Dab of coconut oil, about 1 teaspoon
Directions:
Mix together the peanut butter, coconut flour and maple syrup in a medium bowl. Pop batter in freezer for 30 mins to harden.
Remove from freezer and use a small spoon to scoop up batter and form about 20 small discs for your peanut butter cups, and set aside.
Next, melt chocolate in a microwave safe bowl in the microwave. I usually melt on high for about 2 minutes, adding coconut oil half way in between and stirring. Heat until chocolate is completely melted, being careful not to over melt.
Using a spoon, layer the bottom of your mini baking cups evenly with chocolate. A thin layer is fine as long as the bottom is fully covered in chocolate.
Then add your peanut butter discs on top of the first layer of chocolate and then drop another layer of melted chocolate until the chocolate completely covers your peanut butter, leaving you with a flat top.
Sprinkle flaky Sea salt on top and pop in fridge for 30 minutes or more until ready to enjoy.
