Week 4 Edition: Meal Planning – Superbowl Style (all vegan friendly dishes)

Superbowl Sunday calls for some crowd pleasing appetizers and dishes. if you are looking for some last minute ideas that are healthy, vegan-friendly and take minimal time to prep–these are great choices for the big day!


Appetizer: Black Bean Avocado Cowboy Dip

Recipe:

1 15 oz. can of black beans, rinsed and drained
2 limes, juice of
1 ½ cups of frozen sweet corn
1 organic red bell pepper, diced
1 clove of garlic, minced
1 tablespoon minced shallot
1 teaspoons sea salt
1/8 teaspoon cayenne pepper
1 tablespoon of honey or maple syrup
1/4 cup extra virgin olive oil
1 ripe avocado, chopped

Combine all ingredients except for avocados in a large bowl and mix well. Cover and chill for a couple of hours or more in the fridge. Right before serving, add avocados and mix gently, being careful not to mash them. Serve with Corn Tortilla Chips.

 


Main Dish: One Pot Three Bean Veggie Chili

Recipe:

1 32 oz. jar of marinara tomato sauce (I use Rao’s Marinara Sauce)
1 15 oz. can of black bean, rinsed and drained
1 15 oz. can of navy beans, rinsed and drained
1 15 oz. can of pinto beans, rinsed and drained
2 tablespoons of Simply Organic chili powder
1 teaspoon of cayenne pepper (optional for an extra kick)
2 medium zucchinis,  chopped
1 small green pepper, chopped
1 small red pepper, chopped
1 small onion, finely chopped
3 garlic cloves, minced
3 tablespoons of extra virgin olive oil
salt and pepper to taste

Add olive oil, onions, garlic, zucchini and pepper to a large sauté pan. Simmer on low until veggies start to soften about 3-5 mins. Stir in remaining ingredients and bring to a boil on medium heat. Cover and simmer about 20 minutes or until heated through, stirring occasionally. Serves about 6-8.
