If you are looking for an easy and healthy recipe that is low carb but also filling, this Chia Seed Pudding recipe is perfect and super simple. The best part is that you can make it the night before and have it ready to go for those busy mornings. I used So Delicious’s Dairy Free Coconutmilk Yogurt Alternative as the base but you can swap for any one of your favorite yogurts (try to keep it unsweetened or if not, omit the maple syrup from the recipe). You can also use Almond or Coconut milk but it’s much more filling with yogurt.
Chia seeds pack a nutrient punch in just one serving. Each serving contains 4 grams of protein, 8 grams of fiber and 4 grams of omega 3’s. Talk about a powerhouse!
Recipe:
1/4 cup chia seeds
1 7 oz. container of your favorite unsweetened yogurt
1 tsp vanilla extract
1 tsp maple syrup or honey
Mix all ingredients together well in a small mason jar, top with your favorite fruit and store in the fridge overnight.
