I always like to make a comforting breakfast on Sunday mornings and one of my favorite recipes are these Chocolate Oatmeal Banana Pancakes made with Enjoy Life dark chocolate morsels.
What I love about Enjoy life chocolate is that it’s dairy, nut & soy free – which makes baking a lot easier for those with dietary restrictions. Taste has not been compromised either. My husband loves these pancakes and these have easily become our go-to Sunday morning breakfast.
Made with simple ingredients, these yummy pancakes are so easy to whip up!
Recipe:
1 Ripe Banana
1 Egg (flax egg if vegan)
3/4 Cup of Gluten Free Old Fashioned Oats
1/2 tsp of Pure Vanilla Extract
1/2 tsp Cinnamon
1/4 tsp of Himalayan Sea Salt
1/4 tsp Baking Soda
1/4 cup of chocolate chips
This recipe makes 2 servings.
Blend all ingredients (except chocolate chips) together in blender. Fold in chocolate chips.
Cook on a non-stick pan with two teaspoons of butter or coconut oil.
Drizzle with maple syrup or almond butter
